"Cốm"- special junk-food in Autumn

"Cốm" is truly delicious ,when it is served with red persimmons or ripe bananas .Vong village, on the outskirts of Hanoi, is said to produce the best "Cốm" in northern Vietnam. When autumn comes, Hanoians everywhere always remember the special taste of "Cốm" which is a special gift from the soil made by hard-working peasants, holding a simple and fresh fragrance.
Every autumn, when the cool north-westerly wind brings a cold dew, the sticky rice ears bend themselves into arches waiting for ripe grains because these rice grains are at their fullest and the rice-milk is already concentrated in the grains, and the local farmers will know it is time to make “Cốm” – a specialty made from young green sticky rice.
"Cốm" is often eaten by hand, directly from the lotus leaves, a pinch at a time. When eating “Cốm”, you must enjoy slowly and chew very deliberately in order to appreciate all the scents, tastes, and plasticity of the young rice which is sweet, nutty and buttery.
Processing to make " Com"
Visitors to Hanoi during the "Cốm" making season are invited to go to Vong Village where they will have a chance to listen to the special rhythmic pounding of wooden pestles against mortars filled with young rice and see women shifting and winnowing the pounded young rice.
In Vong village, making “Cốm” used to be a common trade. People from Vong village are said to have the most complicated process for making "Cốm". Firstly, glutinous paddy is planted. To produce their famous "Cốm", residents of Vong village grow a special variety of sticky rice. The sticky rice must be harvested at just the right moment. When the paddy begins to ripen and still contains milk it is reaped but only at early dawn. The rice is plucked off manually so that the grains are not broken. Next, the choice grains are carefully selected, sifted and washed. At night, the grains are dried in a large pan over a soft fire and then pounded in stone mortars. Following this, the young rice is removed from the mortar and winnowed before being poured again into the mortar and the process repeated. This is then repeated exactly seven times so that all the husk is removed from the young sticky grains. There is an art to this part of the process. If the pounding is done irregularly and in haste, or it is not repeated seven times, the green colour of the grains will disappear and be replaced by an unexpected brown colour. Then the whole process will have been to no avail because customers will refuse to buy such produce. This should go some way to explaining exactly how difficult the whole process of "Cốm" making is.
“Not every one can dry and pound "Cốm". It is a closely guarded secret in some families that is never revealed to the mothers or daughters!” says 72-year-old Pham Thi Nguyet, whose family still produces “Cốm”. After the “Cốm” has been pounded, the crystal spring rice is wrapped tightly in emerald lotus leaves to keep it from drying and allowing it to absorb lotus flavour.
And other different local specialties
Cốm” is an ingredient used in many specialities of Vietnam, including “Cốm xào” (browned green sticky rice), “Bánh cốm”  (green sticky rice cake) and “Chè cốm” (sweetened green sticky rice paste) and so on.
“Bánh cốm” is the well-known as it is found at every engagement ceremony. The cakes are wrapped with bananas leaves into squares, tied with a red string and stamped on the outside with a Chinese character meaning "double happiness". With these characteristics, “Bánh cốm” is believed to be a symbol of steadfast and eternal love.
Green sticky rice cakes are sold on Hang Than Street. Sticky cakes stuffed with green rice are sold on Hang Dieu Street and Quoc Huong green rice paste is sold on Hang Bong Street. Restaurants also offer dishes involving “Cốm”, such as chicken stewed with herbs and green rice, or green rice served with fried shrimp.

Bat Trang Ceramic Village

Bat Trang, a small village in the north of Vietnam, is about 13 kilometers south east of Hanoi center, on the other side of Chuong Duong bridge. Why is its name popular to most tourists to northern Vietnam? The answer is its ever famous ceramic and pottery products of high quality. If you have known about Vietnam, you may not be surprised that Bat Trang’s vases, bowls, dishes, and many other kinds of ceramic products have been exported worldwide. 
Bat Trang village is said to be established in 14th or 15th century in several documents. However, according to the villagers, the village perhaps appeared earlier. There are always two stories concerning the village origin. One of these tells that under Ly dynasty, in 1100, when the nation was in its independence and initial growth period, there were 3 scholars who came back from their mission trip to China bringing the ceramic craft industry learned there back to Vietnam and taught the people of Bat Trang. In the other story, in the village history dates back to the 10th century, when King Ly Cong Uan relocated the capital in Thang Long. With the establishment and development of the capital, many businessmen, crafters from many areas come to settle down here to work and trade. In Bat Trang, there was a lot of white clay, so that many potters, among whom was Nguyen Ninh Trang family, came and built the kilns here. Accordingly, Bat Trang has gradually changed from a normal ceramic and pottery village into a famous ceramic and pottery centre until now.

As time went by, the village’s products have developed and become well known for the best quality, style and glaze, both inside and outside of the nation. Many of these are now customized for aristocratic families and religious needs. Its popular foreign markets are Japan (under the brand "Kochi (Giao Chi) ware"), the Netherlands, Britain, Portugal, Southeast Asia, etc.,
Production Process: To produce a complete product, one must follow 3 steps. The first step is making the product frame. The artists select the suitable clay, treat it and start making a raw product. It must be repaired to get the best appearance. Secondly, they decorate and cover it with glazes. Last but not least, the raw products are baked in 3 days and 3 nights. There are several kinds of kiln, yet the temperature must be at 12000 or 13000. After baking, products are brought out, classified and repaired in case there are mistakes. And now we have the perfect product.
Popular product types. Bat Trang products are divided into 3 kinds based on the purpose of use:
1 Utilitarian wares: including plates, bowls, teacups, kettles, wine bottles, flowerpots, vases, jar
 What differs is that they are thicker than Chinese ones.
2 Cult wares: comprise lamp stands, candle holders, incense burner, altar boxes, swords… These are valuable for collectors because of inscription of the production years, the names of the producers and the potters.
3 Decorative objects: house models, altars, statues and architectural fixtures.
The special trait is the diversified decorations on the products. Thanks to a long–lasting history and development, the village’s works have been accumulated with a lot of different special designs. One more thing that makes them distinguished is the glaze, which is of high quality and a variety of colors, such as blue, brown, white, moss green, in both breaking and melting glazes.
In fact, there have appeared a number of competitors both domestically and internationally who take advantages of high technology. Yet most customers prefer the craft products that contain historical and traditional values. Hence, it is no surprise at all that Bat Trang is still found in busy days and works. More importantly, the village is now so popular that absorbs a huge annual number of tourists to visit and buy ceramic goods.

Hoa Lo prison

A Hell on Earth- that is Hoa Lo prison- feeling the past of Viet Nam

The name Hoa Lo, commonly translated as "fiery furnace" or even "Hell's hole", also means "stove". The name originated from the street name "Pho Hoa Lo", due to the concentration of stores selling wood stoves and coal-fire stoves along the street from pre-colonial times.
The prison was built in Hanoi by the French, in dates ranging from 1886–1889 to 1898 to 1901, when Vietnam was still part of French Indochina. The French called the prison Maison Centrale - a traditional euphemism to denote prisons in France. It was located near Hanoi's French Quarter. It was intended to hold Vietnamese prisoners, particularly political prisoners agitating for independence who were often subject to torture and execution. A 1913 renovation expanded its capacity from 460 inmates to 600. It was nevertheless often overcrowded, holding some 730 prisoners on a given day in 1916, a figure which would rise to 895 in 1922 and 1,430 in 1933. By 1954 it held more than 2000 people; with its inmates held in subhuman conditions, it had become a symbol of colonialist exploitation and of the bitterness of the Vietnamese towards the French.

Besides,Hoa Lo prison is known widely by the nickname ‘Hanoi Hilton’ given to it by the Americans during the Second Indochina War, Hoa Lo Prison was originally established by the French colonial government in 1896 for the purpose of detaining political prisoners and formed part of a northern network of ‘unjust and cruel prisons’ which included Cao Bang, Son La, Lai Chau and Hai Phong. Many leading revolutionaries were incarcerated here during the French colonial period, including Phan Boi Chau, Hoang Trong Mau, Luong Van Can, Nguyen Quyen, Nguyen Luong Bang and five future General Secretaries of the Communist Party - Nguyen Van Cu, Le Duan, Truong Chinh, Nguyen Van Linh and Do Muoi. Between 1964 and 1973 the prison’s inmates included several captured American pilots, notably Senator John McCain and Douglas 'Pete' Peterson, America’s first Ambassador to the Socialist Republic of Vietnam.

Most of the original prison was demolished in 1996 to make way for the Hanoi Towers (now Somerset Grand Hanoi) serviced apartment and office complex, but the southernmost corner has been preserved and reopened to the public as a memorial to the revolutionaries who died here in atrocious conditions. Visitors can view the original cells, complete with leg-irons, along with a selection of bilingual (Vietnamese and English) displays illustrating the horrors of life in the prison during the French colonial period.

In prison ,conditions were appalling; food was watery soup and bread. Prisoners were variously isolated, starved, beaten, tortured for countless hours and paraded in anti-American propaganda. "It is easy to die but hard to live," a prison guard told one new arrival, "and we will show you just how hard it is to live." The prison is really “A Hell on Earth”.
The Hanoi Hilton was depicted in the eponymous 1987 Hollywood movie The Hanoi Hilton. Hanoi Tower, built on the site of the infamous prison "Hanoi Hilton"; the entrance to the remaining parts of the prison visible in the foreground. By 1996, most of the walls of the Hanoi Hilton had been torn down to make way for new construction. Portions of the walls were retained for historical reasons. The Vietnamese also have bitter memories of the prison, for many communist revolutionaries were kept and tortured there. In 1998, the old front of the prison was painted and restored and the remaining portions of the prison were turned into a tourist site. Some of the cells have been opened and considerable information about Vietnamese prisoners is available. The information about the U.S. prisoners of war is unreliable. There is now a Hilton Hotel in Hanoi, called the Hilton Hanoi Opera Hotel, which opened in 1999. It was built decades after the Vietnam War was over, but Hilton carefully avoided reusing the dreaded name Hanoi Hilton.

The Vietnam Museum of Ethnology

The Vietnam Museum of Ethnology is a surprisingly interesting place to get the real feel of Viet Nam .Well worth seeing to learn alot about Vietnam as a nation and of its people, ethnics and minorities under one roof
The museum has over 15,000 artefacts including photographs and other multi-media such as audiotapes.The museum is packed full of information detailing traditional Vietnamese ways of life, from religious events to the symbolic rituals of all the Vietnamese ethnic groups, providing a rich tapestry of the culture melting pot existing in Vietnam. The exhibition hall features everyday objects representing each group, a research centre, library and auditorium.
The facility consists of two parts:indoor display;outdoor display( South East Asia display)
About indoor exhibition space can be viewed via a virtual tour which includes the Viet, Muong, Tho, Chut, Tav, Thai, Ka Dai, H’Mong-Dao, Tang, San Dui, Ngai, Mon-Khmer, Nam-Dao, Cham, Hoa and Khmer ethnic groups. There are priceless antiques on display alongside everyday objects such as pipes, baskets and knives.You can also watch videos if you wish
Expecting to see a wide range of interesting items on display at the museum with clothes, jewellery and items relating to weddings, funeral ceremonies and other spiritual rituals also exhibited across the 54 communities offering an incomparable glimpse of their history, heritage and cultural identity.
The outdoor area presents a range of traditional homes including a Tay stilt house, Yao House on half stilts and half earth, the Ha Nhi house made out of beaten walls, Gia Rai Tomb, Se Dang Communal house to name a few. The interiors of the house feature the living and dining areas. And a Viet house complete with indigenous foliage, each separated by a small stream and reached via little bridges. One of the main features of the museum is to present the artefacts in a simple manner so that visitors can enjoy them without being overwhelmed by detail. The museum is suitable for children and all documents and display signs throughout have been translated into intelligent Vietnamese , French and English.
Certaintly the museum is really especially a great choice for those who cannot find time to visit all remote areas where live the majority of Vietnam ethnic minorities.So dont miss it

Located at 57B, Dinh Tien Hoang street, nearby Hoan Kiem Lake, Thang Long Water Puppet Theater was established in 1969 and since 1990 many water puppet shows have been performed by Thang Long theater artists.Every year, about 500 shows are offered to approximately 150,000 audiences. Moreover, the theater has brought water puppetry art to more then 40 foreign countries like Japan, France, America, Australia, Spain… through performance tours, or international cultural exchange program or puppetry festivals.
The content of water puppet performance is very variety.They describle Viet Namese 's life such as  daily life of Vietnamese farmers (cultivating, tending buffalo, catching fishes…), communal entertainment (swimming contest, dragon dancing…), or historical legends (Le Loi returns precious sword…), with modest performance way have appealed audiences for centuries. However, the artists of Thang Long Water Puppet Theater want to renew the old puppet shows with effect of light, music and combination between people and puppets.

The simple beauty of flowers triangular circuit in Ha Giang


Ha Giang is a province located in the far north of Vietnam, and contains Vietnam’s northernmost point. It is definitely a great destination for the sightseeing of grandiose mountainous landscapes and purple circuit triangular flower garden glowing in hillsides, foothills.
The pink flowery fields created a large attraction to the young for the last few years.
This autumn from 12th to 15th of November, Ha Giang’s government will organize the first circuit triangle flower to attract people who love amazing landscape of limestone and granite outcrops and the endless pink flowery fields.
The festival aims to promote, introduce signature image, traditional culture of local people living in the region people to Dong Van Plateau – Worldwide geography parks with numerous tourists and domestic and international friends.
The flowery fields spread continually in Lung Cu. Flowers triangular circuit often open in the end of the autumn from the middle of October to November and December. When just opening flower will have while, after changing to pink and when faded flower is ruby red.
The small flowers with petals bunch each other creating pyramid. It have three side triangle, in the middle is flower bud, the leaves also have pyramid that’s why people living here call flowers triangular circuit.
Local people often get flour of kernel triangular circuit to make cakes or mix this fruit with corn kernel to brew wine creating a special flavor.
This flower has the large attraction with tourists,so creating rush travel in Ha Giang in recent days, this year Ha Giang gave to replicate this flower in many places to meet the travelers’ needs.
.The places which have the most flowers still are Sung La, Dong Van, Pho Cao, Ma Le, Lung Cu, Xin Man.

Halloween has origin the ancient and now it’s still the sacred festival of Wicca people – A ancient religion.
